Ingredients

The following ingredients have 4 Servings
  • 8 Flour Tortillas
  • 6 oz Mozzarella Cheese (shredded)
  • 6 oz Black Olives (sliced & drained)
  • 1/2 cup Red Onion (diced)
  • 1/2 cup Green Bell Pepper (diced)
  • 8 oz Pepperoni
  • 4 oz Parmesan Cheese (shredded)

Instruction

  • Preheat the oven to 400°F.
  • Place 4 tortillas on the counter and spread about 1/3 cup mozzarella cheese over each. Sprinkle a few black olives, 2 tablespoons of onion, and 2 tablespoons of bell pepper over cheese.
  • Top with the pepperoni covering the entire surface. Sprinkle another 1/3 cup cheese over top. Cover each with one of the remaining tortillas.
  • Brush a little water on top of each tortilla. Spread 1/4 cup Parmesan cheese in a thin layer over top of each tortilla.
  • Place the quesadillas, Parmesan side up, on a wire rack standing on a baking sheet. Bake 10 to 12 minutes, checking frequently so as not to burn.
  • Cut into wedges and serve immediately.
