Ingredients

The following ingredients have 16 Servings
  • ½ cup crunchy almond butter
  • ¼ cup honey
  • 2 tablespoons unsweetened cocoa powder
  • 1-2 tablespoons ground coffee (depending on how much coffee flavor you like)
  • ¼ teaspoon peppermint extract
  • 1 cup raw old fashioned oats
  • 3 tablespoons mini semi sweet chocolate chips
  • Pinch of salt

Instruction

  • In a large bowl, mix together almond butter and honey. Place in microwave for about 20 seconds to warm and melt a little.
  • Stir in cocoa powder, coffee, peppermint extract and salt until blended.
  • Add oats and chocolate chips and mix until incorporated.
  • Roll out dough into 16 uniform balls and place on parchment paper. Store in airtight container until ready to eat.
