Ingredients
The following ingredients have 4 Servings
- 1 pound fresh green beans (washed & trimmed)
- 6 slices bacon (thin-sliced, cut into ¼-inch slices)
- 2 cups diced yellow onions
- 1 tablespoon cornstarch
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- ½ teaspoon dry mustard
- 1 teaspoon Worcestershire Sauce
- 1 tablespoon brown sugar
- 2 tablespoon vinegar
Instruction
- Bring a large pot of salted water to a rolling boil. Add the beans and cook 5 minutes or to al dente. Drain the beans, reserving 1 cup green bean water.
- Fry the bacon until crisp; transfer to a paper towel-lined plate.
- Sauté the onions in the rendered bacon fat until softened and translucent.
- In a small mixing bowl, whisk together reserved green bean water, cornstarch, salt, mustard, Worcestershire Sauce, brown sugar and vinegar. Whisk until creamy and fully incorporated. Add this mixture to the sautéed onions and mix.
- Finely chop half of the bacon and add it to the onion mixture.
- Add green beans and stir. Keep hot over very low heat, and serve within 15 minutes, stirring often.
- When ready to serve, sprinkle with the finely chopped crispy bacon.
