Ingredients

The following ingredients have 4 Servings
  • 1 box yellow cake mix, plus ingredients on back of box
  • 1/4 cup granulated sugar
  • 1/4 cup packed dark brown sugar
  • 2 tablespoons cornstarch
  • 3/4 cup light corn syrup
  • 4 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 2 eggs, (lightly beaten)
  • 1 heaping cup chopped pecans
  • 1 teaspoon vanilla extract
  • 3/4 cup packed dark brown sugar
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1 1/2 cups unsalted butter, softened and divided
  • 4 1/2 to 5 cups powdered sugar
  • 1 tablespoon milk

Instruction

  • Bake 18 cupcakes according to box directions. Let cool.
  • In a medium saucepan stir together all filling ingredients EXCEPT pecans and vanilla. Bring to a boil. Remove from heat and stir in pecans and vanilla. Pour into a bowl. Let mixture cool on the counter for 10 minutes and then refrigerate for 1 hour.
  • Scoop out the center of each cupcake. Fill with filling.
