- 3/4 cup pecan halves
- 3 tablespoons dark Karo syrup (divided)
- 1/2 cup vegetable shortening
- 1/2 cup brown sugar
- 2 tablespoons molasses
- 1/4 cup chopped pecans
- 2 beaten egg yolks
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instruction
- Preheat the oven to 350°F, or 325°F if you plan to use a glass baking dish.
- Mix the pecan halves with 1 tablespoon dark Karo syrup and set aside.
- Beat the shortening with the brown sugar until creamy.
- Add the molasses, 2 tablespoons dark Karo syrup, and the chopped pecans. Blend.
- Beat in the egg yolks and vanilla.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt.
- Slowly add the dry ingredients to the wet ingredients, stirring until all ingredients are well combined.
- Transfer the batter to an 8x8-inch greased baking pan.
- Arrange the pecan halves that have been mixed with the Karo syrup on top of the batter.
- Bake for 25 to 30 minutes.
