  • 3/4 cup pecan halves
  • 3 tablespoons dark Karo syrup (divided)
  • 1/2 cup vegetable shortening
  • 1/2 cup brown sugar
  • 2 tablespoons molasses
  • 1/4 cup chopped pecans
  • 2 beaten egg yolks
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instruction

  • Preheat the oven to 350°F, or 325°F if you plan to use a glass baking dish.
  • Mix the pecan halves with 1 tablespoon dark Karo syrup and set aside.
  • Beat the shortening with the brown sugar until creamy.
  • Add the molasses, 2 tablespoons dark Karo syrup, and the chopped pecans. Blend.
  • Beat in the egg yolks and vanilla.
  • In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  • Slowly add the dry ingredients to the wet ingredients, stirring until all ingredients are well combined.
  • Transfer the batter to an 8x8-inch greased baking pan.
  • Arrange the pecan halves that have been mixed with the Karo syrup on top of the batter.
  • Bake for 25 to 30 minutes.
