Ingredients

The following ingredients have 6 Servings
  • 1 sheet shortcrust pastry room temperature
  • 4 egg
  • 1 cup golden syrup
  • 4 1/2 tbs brown sugar
  • 3 1/2 tbs caster sugar
  • 30 g butter
  • 250 g pecans
  • 50 g butter chopped softened
  • 6 tbs brown sugar
  • 3 tbs honey

Instruction

  • Crush two thirds of the pecans with a mallet. Set the rest aside.
  • In a large mixing bowl, whisk the eggs and add 4½ tablespoons brown sugar, caster sugar, butter, golden syrup and crushed pecans.
  • Heat oven to 180C.
  • Line a pie dish with pastry and pour in the mixture evenly and bake for 35-40 minutes.
  • Pie filling: In a small saucepan, mix brown sugar, butter and honey. Stir constantly over low heat until a smooth sauce forms.
  • When the first 'bake' is finished, remove the pie dish from the oven and reduce temperature to 150C.
  • Place remaining pecans over the pie and evenly drizzle the filling over the top.
  • Return to oven for 15 minutes.
