Ingredients
The following ingredients have 6 Servings
- 1 sheet shortcrust pastry room temperature
- 4 egg
- 1 cup golden syrup
- 4 1/2 tbs brown sugar
- 3 1/2 tbs caster sugar
- 30 g butter
- 250 g pecans
- 50 g butter chopped softened
- 6 tbs brown sugar
- 3 tbs honey
Instruction
- Crush two thirds of the pecans with a mallet. Set the rest aside.
- In a large mixing bowl, whisk the eggs and add 4½ tablespoons brown sugar, caster sugar, butter, golden syrup and crushed pecans.
- Heat oven to 180C.
- Line a pie dish with pastry and pour in the mixture evenly and bake for 35-40 minutes.
- Pie filling: In a small saucepan, mix brown sugar, butter and honey. Stir constantly over low heat until a smooth sauce forms.
- When the first 'bake' is finished, remove the pie dish from the oven and reduce temperature to 150C.
- Place remaining pecans over the pie and evenly drizzle the filling over the top.
- Return to oven for 15 minutes.
