  • 250 g (8.8oz) frozen peas
  • Small handful of roughly chopped parsley
  • 1 tbsp olive oil
  • 1 tbsp lemon juice (or to taste)
  • Salt
  • 4 thick slices of bread (toasted)
  • 3 tbsp toasted sesame seeds
  • 3 tbsp chopped pistachio nuts
  • Extras for topping tomatoes and cress (olive oil for drizzling)
