Ingredients
The following ingredients have 2 Servings
- 2 small shallots
- 1 sm head Radicchio
- 2 small Pear
- 1 oz Walnut
- 6 ozs Whole Grain Pasta
- salt
- 1.5 Tbsps olive oil
- 0.75 cup Soy creamer
- black peppers
Instruction
- Peel shallots and very finely chop.
- Rinse radicchio, spin dry and cut into fine strips.
- Rinse pears and cut into quarters, remove the core and cut into approximately 1/2-inch cubes. Roughly chop the walnuts.
- Lightly toast walnuts in a non-stick pan over medium heat. Remove nuts from the pan and wipe the pan clean.
- Cook pasta in boiling salted water according to package instructions.
- Add oil to the pan and sauté shallots and pear cubes over medium heat for 5-6 minutes, stirring frequently. Add walnuts.
- Add soy creamer and let simmer until creamy, about 2-3 minutes. Season with salt and pepper.
- Strain the pasta and drain well. Stir pasta and radicchio into the sauce. Mix well and serve with plenty of freshly ground pepper.
