Ingredients

The following ingredients have 2 Servings
  • 2 small shallots
  • 1 sm head Radicchio
  • 2 small Pear
  • 1 oz Walnut
  • 6 ozs Whole Grain Pasta
  • salt
  • 1.5 Tbsps olive oil
  • 0.75 cup Soy creamer
  • black peppers

Instruction

  • Peel shallots and very finely chop.
  • Rinse radicchio, spin dry and cut into fine strips.
  • Rinse pears and cut into quarters, remove the core and cut into approximately 1/2-inch cubes. Roughly chop the walnuts.
  • Lightly toast walnuts in a non-stick pan over medium heat. Remove nuts from the pan and wipe the pan clean.
  • Cook pasta in boiling salted water according to package instructions.
  • Add oil to the pan and sauté shallots and pear cubes over medium heat for 5-6 minutes, stirring frequently. Add walnuts.
  • Add soy creamer and let simmer until creamy, about 2-3 minutes. Season with salt and pepper.
  • Strain the pasta and drain well. Stir pasta and radicchio into the sauce. Mix well and serve with plenty of freshly ground pepper.
