Ingredients
The following ingredients have 8 Servings
- 3 lbs boneless skinless chicken thighs, cut into 1 inch pieces
- ½ cup creamy natural peanut butter
- 6 garlic cloves, minced
- 2 tbsp soy sauce (or tamari)
- 2 tbsp toasted sesame oil
- 1 tbsp white vinegar
- 4 green onions, minced, divided
- ¼ cup cilantro, minced (plus extra for serving)
- 2 tsp ground ginger
- 1 tsp salt
- ½ cup peanuts, crushed for serving
- Red pepper flakes, optional
- Twelve metal skewers
Instruction
- In a bowl mix together the peanut butter, garlic, soy sauce, sesame oil, white vinegar, half of the green onions (reserve the rest for a garnish), cilantro, ground ginger and salt
- Add chicken to the peanut sauce, toss well until all the pieces are evenly coated
- Not necessary, but this chicken is best if allowed to marinate for at least 1 hour or over night
- Heat oven to 400° F
- Place a cooling rack on top of a rimmed baking sheet
- Spray or brush the cooling rack with oil to prevent sticking
- Thread the chicken onto metal skewers or wooden skewers that have been thoroughly soaked in water to prevent burning
- Bake chicken for 20 minutes or until the internal temperature reaches 165°F. **This recipe is also great grilled over medium high heat
