Ingredients

The following ingredients have 4 Servings
  • 1 Tbsp sesame oil
  • 1 onion (diced)
  • 1 red bell pepper (diced)
  • 1 carrot (shredded)
  • 1 Tbsp garlic paste or minced garlic
  • 1 Tbsp ginger paste or minced ginger
  • 1 pound ground chicken
  • 4 Tbsps peanut butter
  • 3 Tbsps hoisin sauce
  • 2 Tbsps soy sauce
  • 1 Tbsp honey
  • 1 head butter or boston lettuce
  • Optional toppings: chopped peanuts, green onions, Sriracha

Instruction

  • In a large skillet over medium heat add the sesame oil, onion, red pepper, and carrot. Cook 4-5 minutes, stirring occasionally.
  • Add the garlic paste, ginger paste, and ground chicken. Cook 4-5 minutes, stirring occasionally and breaking apart the ground chicken.
  • Add the peanut butter, hoisin sauce, soy sauce, and honey. Cook 4-5 more minutes, stirring occasionally.
  • Let cool slightly and fill the lettuce leaves with the chicken mixture. Top with chopped peanuts, green onions, and/or Sriracha if desired.
