Ingredients
The following ingredients have 4 Servings
- 1/2 cup unsalted butter (room temperature)
- 1/2 cup creamy peanut butter
- 1/4 cup granulated sugar
- 3/4 cup light brown sugar
- 1 (3.4 oz.) box Instant Vanilla Pudding Mix (*Just the powder)
- 2 large eggs
- 1 additional egg yolk
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 1/2 cups milk/dark chocolate chips
Instruction
- Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper or silicone baking mat and set aside.
- In a large bowl or stand mixer fitted with a paddle attachment, cream the butter, peanut butter, and sugars together until smooth.
- Add in the pudding, eggs, additional egg yolk, and vanilla. Beat for 1 minute on medium speed.
- In a separate bowl, whisk together the flour, baking soda, and salt. Add dry ingredients to the wet ingredients a 1/2 cup at a time and mix until combined.
- Fold in the chocolate chips.
- For evenly sized cookies, use a medium cookie scoop to make 1 1/2 tablespoon sized scoops of dough onto the prepared cookie sheet about two inches apart.
- Bake for 10-13 minutes. Remove from the oven and allow the cookies to cool on the cookie sheet for a couple of minutes before transferring to a cooling rack.
