Ingredients
The following ingredients have 4 Servings
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/4 cup chopped dry roasted peanuts
- 1 cup mashed ripe banana
- 1/3 cup creamy peanut butter
- 6 tablespoons melted butter (cooled to room temperature)
- 1 teaspoon vanilla extract
- 2 large eggs (lightly beaten)
- 1/4 cup chopped dry roasted peanuts
- 1/4 cup chopped dried sweetened banana chips
- 1/4 cup light brown sugar
- 1/4 cup all-purpose flour
- 2 tablespoons old-fashioned oats
- 1/4 teaspoon cinnamon
- 3 tablespoons melted butter (cooled to room temperature)
Instruction
- Preheat oven to 350° F.
- Sift together in a mixing bowl the all purpose flour, baking powder, baking soda, and salt.
- Stir in the granulated sugar and chopped peanuts.
- Beat eggs lightly with a fork in another small mixing bowl.
- Stir in the banana, peanut butter, melted butter, and vanilla.
- Place baking cups in the cavity of a muffin pan or spray with Baker's Release spray.
- Fill baking cups about 2/3 full with batter (about ¼ cup.)
- Mix together the ingredients for the streusel In another small bowl, until crumbly but well combined.
- Divide streusel by sprinkling evenly over batter.
- Bake muffins in the preheated 350° F. oven for about 20 minutes or until you can insert a toothpick into a muffin and remove it without wet batter sticking to it.
- Cool 5 minutes in the muffin pan, then gently turn out muffins and finish cooling on a wire rack.
