Ingredients

The following ingredients have 4 Servings
  • 1/2 cup unsalted butter (, softened to room temp)
  • 1/2 cup peanut butter
  • 1 cup brown sugar (, packed)
  • 1 large egg
  • 1 1/2 teaspoon vanilla extract
  • 1/2 cup mashed banana (, about 1 medium-sized banana)
  • 2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cup chocolate chips

Instruction

  • Beat together the butter, sugar & peanut butter in a large bowl using an electric mixer. Once combined beat in the egg, vanilla and mashed banana.
  • Turn the mixer down to low speed and carefully mix in the flour, baking soda and salt. 
  • Then turn off the mixer and stir in 1 cup of the chocolate chips. The batter will be very soft and sticky. 
  • Cover the bowl withe clingfilm and refrigerate for at least 2 hours. 
  • When ready to bake, preheat the oven to 350F degrees and line 2 cookie sheets with parchment paper or silicone baking mats. 
  • Form the dough into balls about 1.5-2 tablespoons in size. Place 2 inches apart on the prepared cookie sheets, flatten the balls slightly and place the remaining 1/4 cup chocolate chips on the top of each cookie. 
  • Bake for 7-9 minutes or until the tops look just set. Allow to cool on the tray for 10 minutes before transferring to a wire rack
