Ingredients

The following ingredients have 12 Servings
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter (at room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1/2 cup chunky peanut butter (or creamy if you prefer)
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 1/2 cups old fashioned oats
  • 1 apple (peel removed and cut into 1/4 inch dice)
  • Cinnamon Sugar - 1/4 cup sugar mixed with 1-2 Tbsp of cinnamon

Instruction

  • Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
  • Whisk together flour, baking soda and salt. Set aside.
  • Beat the butter and sugars together until smooth and creamy. Add the peanut butter and mix again until smooth.
  • Add the egg and vanilla extract and mix until well combined.
  • Add the flour mixture and oatmeal and mix just until combined. Stir in the diced apples.
  • Scoop the dough into walnut size balls and place on prepared cookie sheet. Bake for 11-14 minutes total, removing from the oven halfway to sprinkle with the cinnamon sugar mixture. Rotate pans and continue baking until light golden brown around the edges. Let the cookies cool on the baking sheet for for a couple of minutes before transferring to a cooling rack to cool completely.
