Ingredients

The following ingredients have 30 Servings
  • 2 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1/2 tsp. salt
  • 3/4 cup sugar
  • 2 large eggs
  • 3 cups oatmeal ((I use old-fashioned rather than quick oats))
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1 tsp. vanilla extract
  • 12 oz. pkg. Nestle's butterscotch morsels
  • 2 cups peaches (peeled and finely diced)

Instruction

  • Preheat oven to 375°.
  • In a mixing bowl, combine butter, sugar, brown sugar, eggs, vanilla, salt, baking soda and cinnamon; beat until light and fluffy.
  • Gradually stir in flour, oatmeal, peaches and butterscotch chips with a wooden spoon.
  • Spray cookie sheets with cooking spray.
  • Using a ¼ cup ice cream scoop, scoop dough and place cookie dough on prepared cookie sheets.
  • Bake 15-20 minutes or until done.
  • Rotate cookie sheets on racks every 6-7 minutes.
