Ingredients
The following ingredients have 30 Servings
- 2 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1/2 tsp. salt
- 3/4 cup sugar
- 2 large eggs
- 3 cups oatmeal ((I use old-fashioned rather than quick oats))
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1 cup unsalted butter (softened)
- 3/4 cup brown sugar
- 1 tsp. vanilla extract
- 12 oz. pkg. Nestle's butterscotch morsels
- 2 cups peaches (peeled and finely diced)
Instruction
- Preheat oven to 375°.
- In a mixing bowl, combine butter, sugar, brown sugar, eggs, vanilla, salt, baking soda and cinnamon; beat until light and fluffy.
- Gradually stir in flour, oatmeal, peaches and butterscotch chips with a wooden spoon.
- Spray cookie sheets with cooking spray.
- Using a ¼ cup ice cream scoop, scoop dough and place cookie dough on prepared cookie sheets.
- Bake 15-20 minutes or until done.
- Rotate cookie sheets on racks every 6-7 minutes.
