Ingredients
The following ingredients have 8 Servings
- 1/4 cup bourbon
- 1/4 cup maple syrup
- 1/4 cup reduced-sodium soy sauce
- 1 clove garlic (minced)
- 1 tbsp fresh ginger (peeled and minced)
- 1 small jalapeno pepper (seeded, cored and minced)
- 1 tbsp vegetable oil (for the grill)
- 2 boneless, skinless chicken breasts (cut into 2" cubes)
- 2 ripe peaches (pits removed and cut into 2" cubes)
- 1/2 red onion (sliced into 2" pieces)
- 2 tbsp fresh thyme leaves
Instruction
- In a bowl, whisk together bourbon, maple syrup, soy sauce, garlic, ginger, and jalapeno
- Put chicken cubes in a zip lock bag, and pour marinade over, making sure the chicken is covered
- Refrigerate overnight or at least 4 hours
- Remove chicken, discarding marinade
- Heat grill to medium-high, and spray with cooking spray or brush lightly with oil
- On wooden skewers, thread chicken cubes, peach, and onion pieces, alternating
- Grill 8-10 minutes, turning occasionally
- Remove from grill and sprinkle with thyme leaves before serving
