Ingredients
The following ingredients have 4 Servings
- 4 cups Mixed salad greens
- 1 large cucumber (peeled, quartered lengthwise, and sliced)
- 2 plum tomatoes (sliced into wedges)
- 2 large peaches (sliced)
- 2 cups cooked and chopped chicken
- 1 cup blue cheese crumbles
- Creamy Greek Yogurt Maple Dijon Dressing (or your favorite honey dijon salad dressing)
Instruction
- Divide salad greens between four plates. Top each with about a quarter of the cucumbers, tomatoes, and peaches, and about half a cup of chicken. Sprinkle each with about a quarter cup blue cheese and drizzle with 1-2 Tablespoons salad dressing.
