Ingredients

The following ingredients have 5 Servings
  • 6 peaches (peeled, pitted, and cut into wedges or large chunks)
  • 2 Tbsp. sugar
  • Juice of 1 lemon
  • Fresh mint (finely chopped)
  • 1/3 cup toasted pinenuts

Instruction

  • In a large bowl, toss the peaches gently with the sugar and lemon. Set aside to marinate for 1-2 hours.
  • Toast the pine nuts (I tossed for 2-3 minutes, turning several times, in the microwave). Cool.
  • Sprinkle fresh mint and pine nuts on top of the peaches; serve!
