Ingredients
The following ingredients have 12 Servings
- 1 cup old fashioned oats
- ¾ cup all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 2 tablespoons unsalted butter (softened to room temperature)
- ½ cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon peach flavoring (optional)
- ½ cup peaches (peeled and finely chopped)
- 1 cups powdered sugar
- ¼ teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 tablespoon butter (softened)
- 1-3 tablespoons cream or milk
Instruction
- Preheat oven to 325º F and line a baking sheet with a silicone mat or parchment paper.
- In a medium bowl, stir oats, flour, baking powder, and salt together until well combined. Set aside.
- In a separate bowl, beat softened butter and brown sugar together until creamy. Mix in egg, vanilla, and peach flavoring. Stir in dry ingredients until just incorporated, and then fold in chopped peaches.
- Drop spoonfuls of the dough, about the size of walnuts onto the lined baking sheet. Bake for 13-15 minutes, or until lightly browned. Remove from oven, and let cool about 15 minutes on the cookie tray before transferring to wire rack to cool completely.
- To prepare icing: Combine all icing ingredients, adding cream or milk to achieve desired consistency. Drizzle or spread icing over warm cookies.
