Ingredients

The following ingredients have 4 Servings
  • 2 cups Mixed Greens (Spring Mix)
  • 8 ounces Burrata
  • 2 Peaches (ripe)
  • 1/4 cup Toasted Slivered Almonds
  • 1/4 cup Blueberries
  • 1 Tablespoon Olive Oil
  • 1 teaspoon mint (chopped fine)
  • 1 Tablespoon Honey
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 2 teaspoons Balsamic Vinegar

Instruction

  • In a small bowl, mix dressing ingredients together and set aside.
  • Assemble salad by filling a bowl with mixed greens.
  • Slice the Burrata in half
  • Pit and slice peaches
  • Add peaches, blueberries, and burrata to the salad
  • Sprinkle with toasted slivered almonds
  • Dress just before serving.
