Ingredients

The following ingredients have 6 Servings
  • 1/2 cup white balsamic vinegar
  • 1 garlic clove, minced
  • 3 tablespoons brown sugar
  • 3 tablespoons extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 2 fresh ripe peaches, cut into 1-inch pieces, or sliced
  • 2 pounds tomatoes, preferably heirloom, cut into bite size pieces (remove seeds and juices if plentiful)
  • 10-12 fresh basil leaves, whole or chopped
  • 8 ounces fresh mozzarella sliced or cut into bite size pieces
  • flakey salt, to taste
  • freshly ground black pepper, to taste

Instruction

  • In a large bowl, whisk together the vinegar, garlic, brown sugar, olive oil and salt until fully incorporated. Add the peaches, tomatoes and the basil, toss with the dressing. Mix in mozzarella pieces. Sprinkle with flakey salt & freshly ground pepper to taste. Note: Alternatively you can slice the peaches, tomatoes and mozzarella and arrange beautifully on a platter, tuck in the basil leaves then drizzle with dressing
