Ingredients

The following ingredients have 4 Servings
  • 12 ounces pasta – spaghetti or linguine work best
  • 3 large tomatoes, each cut into 4 thick slices
  • 1/4 cup olive oil
  • sea salt and black pepper
  • 8 ounces fresh mozzarella, sliced
  • 1/4 cup grated Parmesan plus extra for garnish
  • 2 cloves garlic, minced
  • 1/4 crushed red pepper
  • 1 cup fresh basil leaves, plus extra for garnish

Instruction

  • Cook the pasta according to the package directions, then drain it and return it to the pot.
  • Line a rimmed baking sheet with nonstick foil and place the tomato slices on the foil in a single layer.  Sprinkle them with salt and pepper.  Lay a slice of mozzarella cheese on each tomato and sprinkle with parmesan cheese.
  • Run the cheesy tomatoes under your broiler until the cheese is melty and starting to brown, about 4-5 minutes (watch them carefully!).
  • Put the oil, garlic and red pepper in a small saucepan and heat it up for about 2-3 minutes.  Pour it over the pasta and toss.  Add the basil and toss again.
  • Divide the pasta among plates, top each with 3 tomato slices, sprinkle on a little more basil and parmesan and serve!
