Ingredients

The following ingredients have 4 Servings
  • 5 Tbsps olive oil
  • 4 onions (finely chopped)
  • 4 cloves garlic cloves (sliced)
  • 1 tsp ground cilantro
  • 1 Cinnamon stick (broken)
  • 1 tsp allspice
  • 0.5 tsp cayenne pepper
  • 1 tsp paprika
  • 0.25 tsp Chili flakes (optional)
  • 0.5 tsp ground Black pepper
  • 1 tsp salt
  • 71 ozs ripe tomatoes (roughly chopped)
  • 3 Tbsps tomato puree
  • 0.875 cup white wine vinegar
  • 1 cup sugar (scant)

Instruction

  • Heat the oil in a large pan and cook the onions over a low heat for 5 minutes. Add the garlic and cook for a further 5 minutes. Add the spices and cook for 1 minute.
  • Stir in the remaining ingredients and bring to a boil. Reduce the heat and simmer, uncovered, for 1 hour until the tomatoes are pulpy and the liquid has reduced. Cool slightly.
  • Put in batches into a blender or food processor and blend until smooth, then sieve into a bowl.
  • Pour into warm sterilised jars and seal tightly. Use within 6 months.
