Ingredients
The following ingredients have 4 Servings
- 5 Tbsps olive oil
- 4 onions (finely chopped)
- 4 cloves garlic cloves (sliced)
- 1 tsp ground cilantro
- 1 Cinnamon stick (broken)
- 1 tsp allspice
- 0.5 tsp cayenne pepper
- 1 tsp paprika
- 0.25 tsp Chili flakes (optional)
- 0.5 tsp ground Black pepper
- 1 tsp salt
- 71 ozs ripe tomatoes (roughly chopped)
- 3 Tbsps tomato puree
- 0.875 cup white wine vinegar
- 1 cup sugar (scant)
Instruction
- Heat the oil in a large pan and cook the onions over a low heat for 5 minutes. Add the garlic and cook for a further 5 minutes. Add the spices and cook for 1 minute.
- Stir in the remaining ingredients and bring to a boil. Reduce the heat and simmer, uncovered, for 1 hour until the tomatoes are pulpy and the liquid has reduced. Cool slightly.
- Put in batches into a blender or food processor and blend until smooth, then sieve into a bowl.
- Pour into warm sterilised jars and seal tightly. Use within 6 months.
