- 1 cup (150g) polenta (or stone-ground or coarse cornmeal)
- 1 pinch of salt
- 2 Tablespoons (30g) butter
- 1/2 cup (50g) grated parmesan cheese
- 1 red onion, thinly sliced
- 2 Tablespoons olive oil
- 1 pound (450g) wild mushrooms, sliced
- 1 garlic clove, thinly sliced
- 2 teaspoons finely chopped fresh thyme + extra for topping
- 1/2 teaspoon red chili flakes
- 3 Tablespoons sun-dried tomatoes, puréed*
- 1 Tablespoon balsamic vinegar
- 3 Tablespoons butter
- Salt and freshly ground pepper
- Pine nuts, toasted (to serve)
