Ingredients
The following ingredients have 4 Servings
- 1 tomato (chopped)
- 1 cloves garlic (crushed with a garlic press)
- pinch sea salt flakes
- freshly ground black pepper
- 1.5 TB olive oil
- 1 tsp lemon juice
- 120 g iceberg lettuce (shredded)
- 20 g Parmesan cheese (finely grated)
Instruction
- Use a small, sharp paring knife to finely chop the tomatoes. Place inside a bowl.
- Peel the garlic clove and use a garlic press to finely crush the garlic into the bowl of tomatoes. Season with salt and pepper and add the olive oil and lemon juice. Mix to combine.
- In a separate bowl, mix the thinly sliced lettuce and grated Parmesan.
- You can make both these elements a few hours ahead of time. Cover with clingfilm and leave the tomato mixture at room temperature and the lettuce mixture in the fridge.
- To serve, simply combine both elements. You would be surprised how such a simple salad can be so refreshing and tasty. Lovely at your next BBQ-for-two.
