Ingredients

The following ingredients have 4 Servings
  • 1 tomato (chopped)
  • 1 cloves garlic (crushed with a garlic press)
  • pinch sea salt flakes
  • freshly ground black pepper
  • 1.5 TB olive oil
  • 1 tsp lemon juice
  • 120 g iceberg lettuce (shredded)
  • 20 g Parmesan cheese (finely grated)

Instruction

  • Use a small, sharp paring knife to finely chop the tomatoes. Place inside a bowl.
  • Peel the garlic clove and use a garlic press to finely crush the garlic into the bowl of tomatoes. Season with salt and pepper and add the olive oil and lemon juice. Mix to combine.
  • In a separate bowl, mix the thinly sliced lettuce and grated Parmesan.
  • You can make both these elements a few hours ahead of time. Cover with clingfilm and leave the tomato mixture at room temperature and the lettuce mixture in the fridge.
  • To serve, simply combine both elements. You would be surprised how such a simple salad can be so refreshing and tasty. Lovely at your next BBQ-for-two.
