Ingredients

The following ingredients have 4 Servings
  • 1 red bell pepper (capsicum) (roughly chopped)
  • 330 g courgettes (approx. 2 medium) (roughly chopped)
  • 2 TB olive oil
  • salt and freshly ground black pepper
  • 2 rib-eye steaks (approx. 220g each)
  • 1 tsp smoked paprika
  • 1 TB lard or ghee (to fry steaks)
  • 1/2 lemon (juice only)
  • 70 g full-fat feta cheese
  • 35 g wild rocket
  • sea salt flakes

Instruction

  • Preheat the oven to 200°C (fan oven). This is 220°C for conventional ovens (or 425°F / gas mark 7).
  • Combine the chopped courgettes and red pepper in a bowl. Drizzle over the olive oil and season generously with salt and freshly ground black pepper. Spread out on a baking tray lined with parchment paper.
  • Bake in the middle rack of the oven for 15 minutes. I always stir the mixture and rotate the tray halfway through.
  • While the vegetables are baking, remove the steaks from their packaging and pay dry with good-quality kitchen paper. Scatter the smoked paprika on all sides and season with salt and freshly ground black pepper.
  • Heat the fat of your choice in a large non-stick pan over high heat. Fry the steaks until done to your liking. I like to get it nicely charred on the outsides, while still medium rare in the middle.
  • Remove the steaks from the pan and set aside on a plate. Cover with foil and leave to rest for 5-8 minutes before slicing into thinner strips.
  • While the steaks are resting, squeeze the lemon juice (catch the pips!) into the same pan (off the heat) and scrape around, as these tasty juices should not be wasted.
  • Serve the cooked vegetables with the rocket, sliced steak and crumbled feta. Drizzle over any steak resting juices (as well as the lemony liquid in the pan). Season with salt flakes and additional black pepper, if needed. This warm salad is best served immediately (else the steaks and the fat used to cook them will congeal unpleasantly).NOTE: If you feel the salad needs a little more acidity, another squeeze of fresh lemon (if you still have half a one kicking about) would be LOVELY.
