Ingredients
The following ingredients have 4 Servings
- 0.25 cup Oil
- 7 ozs onions (finely chopped)
- 2 red Bell pepper (chopped)
- 1 clove garlic cloves (finely chopped)
- 1.5 tsps salt
- 26 ozs lean stewing Beef (cubed)
- 1 pinch Caraway
- 1.5 Tbsps Hungarian paprika
- Beef stock
- 35 ozs potatoes (peeled and diced)
- 5 ozs tomatoes (quartered)
- 2 Tbsps chopped parsley

Instruction
- Heat the oven to 150°C (130° fan) 300°F gas 2.
- Heat the oil in a flameproof casserole dish and cook the onions, peppers, garlic and salt for 5 minutes until softened. Remove and set aside.
- Add the beef to the dish and brown on all sides.
- Add the onions, peppers and garlic to the dish with the caraway seeds and paprika. Add just enough stock to cover the contents of the dish. Cover and cook for 1 hour.
- Add the potatoes and cook for a further hour.
- Add the tomatoes to the dish and cook for a further 20-30 minutes. Sprinkle with parsley and garnish with parsley sprigs.
