Ingredients
The following ingredients have 4 Servings
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 500 g lean chicken mince
- 2 teaspoons paprika
- ¼ teaspoon chilli powder
- ½ cup fresh white breadcrumbs
- ¼ cup sour cream
- 1 teaspoon salt
- ½ teaspoon white pepper
- oil for frying
- 2 large new potatoes, sliced very thinly
- 8 thick slices baguette loaf
- 1 small green capsicum, sliced in thin rounds
- bread and butter cucumbers, drained
- whole egg mayonnaise
Instruction
- <p><b>1.</b> Heat oil in small pan. Add onion, cook over medium heat 3–4 minutes or until soft and golden. Remove from heat; cool slightly. Combine chicken mince, paprika, chilli, breadcrumbs, cream, salt, pepper and onion in large bowl. Mix with hands until well combined. Divide mixture into 4 portions and shape into round patties.</p> <p><b>2.</b> Pour oil into medium pan to depth of 2 cm and heat to moderately hot. Pat potato slices dry with paper towels. Cook potato slices in small batches 2–3 minutes or until they turn golden. Drain on paper towels. Cover and keep warm.</p> <p><b>3.</b> Heat a large frying pan or grill plate, brush liberally with oil. Cook patties 3–4 minutes each side or until golden and cooked through.</p> <p><b>4.</b> Toast baguette slices and butter if desired. On 4 slices of toast, overlap cooked potato slices. Add slices of capsicum and a patty, cucumbers and mayonnaise. Top with a slice of toast. Garnish with fresh herbs, if desired.</p>
