Ingredients

The following ingredients have 4 Servings
  • 2 Tbsp cashew halves
  • 2 Tbsp dried cranberries
  • 1/2 papaya (medium sized)
  • 2 Tbsp coconut palm sugar
  • 2 Tbsp Almond slices
  • lime zest (for garnish (optional))

Instruction

  • Soak cashews and cranberries in warm water for 15 minutes
  • Remove seeds from papaya and cut into rough cubes
  • In a blender, add sugar and papaya
  • Drain the soaked cranberries and cashews before adding to the blender
  • Blend on very low speed for about 2 minutes
  • Finally, blend on high speed for 2 minutes or until it is smooth. By smooth, I mean smooooooooth.
  • Transfer to mini trifle cups and chill for about 15 minutes
  • Top with Almond slices and lime zest
