Ingredients

The following ingredients have 4 Servings
  • 1 lime
  • 1 small jalapeno (seeds removed and finely chopped)
  • 1/2 English Cucumber (diced)
  • 2 Tablespoons red onions (diced)
  • 4 teaspoons chopped cilantro
  • 1 teaspoon salt (divided)
  • 1/2 Tablespoon Extra Virgin Olive Oil
  • 4 6-ounce boneless salmon fillets (either Sockeye or Atlantic)
  • 1/4 teaspoon black pepper

Instruction

  • Remove the peel and pith from the lime. Finely slice the flesh of the entire lime.
  • In a bowl, mash the lime with a fork to release some of the juices.
  • Add in the jalapeno, cucumber, onion, cilantro and 1/2 teaspoon salt together in the bowl and stir to combine.
  • Set aside for 15-20 minutes to let the flavors combine and marinate together.
  • Heat the oil in a large nonstick skillet over medium heat.
  • Season salmon all over with the remaining salt and pepper.
  • Cook salmon, skin side up, until golden brown...about 4 minutes.
  • Carefully flip the salmon and continue to cook until flesh is opaque and flakes easily with a fork, about 4 minutes more.
  • Transfer salmon to plates and spoon cucumber-lime salsa over the top.
  • Serve with your favorite salad.
