  • ⅓ cup shallots (minced)
  • ½ cup unsalted butter (cut into ½-inch cubes, chilled)
  • 3 tablespoons dill (chopped fresh)
  • 2 teaspoons lemon zest
  • 3 teaspoons lemon juice
