Ingredients

The following ingredients have 4 Servings
  • 2 tablespoons grapeseed oil or olive oil
  • 1 large onion, (chopped)
  • 1 pound shitake mushrooms, (chopped)
  • 2 quarts Chicken Stock , water, or Kettle & Fire Bone Broth
  • ½ teaspoon celtic sea salt

Instruction

  • Heat oil in a 6 quart stock pot over medium heat
  • Add onion and sauté 15 to 20 minutes until caramelized
  • Add mushrooms and sauté 5 to 10 minutes until tender
  • Add stock and salt to pot, bring to a boil, and simmer 10 minutes
  • Transfer to a vitamix and carefully purée in small batches until smooth
  • Serve
