Ingredients
The following ingredients have 4 Servings
- 2 tablespoons grapeseed oil or olive oil
- 1 large onion, (chopped)
- 1 pound shitake mushrooms, (chopped)
- 2 quarts Chicken Stock , water, or Kettle & Fire Bone Broth
- ½ teaspoon celtic sea salt
Instruction
- Heat oil in a 6 quart stock pot over medium heat
- Add onion and sauté 15 to 20 minutes until caramelized
- Add mushrooms and sauté 5 to 10 minutes until tender
- Add stock and salt to pot, bring to a boil, and simmer 10 minutes
- Transfer to a vitamix and carefully purée in small batches until smooth
- Serve
