The following ingredients have 6 Servings
  • 1 1/2 lbs boneless skinless chicken thighs
  • 1 Tbsp coconut oil (ghee, or avocado oil)
  • 3/4 tsp sea salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 1/2 tsp chili powder
  • Large pinch Chipotle powder (or more, to taste 
)
  • Juice of 2 limes
  • 1 lb cauliflower rice (I purchased this pre-"riced”)
  • 1 Tbsp coconut oil (ghee, or avocado oil)
  • 3/4 tsp sea salt
  • 1-2 Tbsp fresh lime juice
  • 1 jalapeño pepper minced
  • 3/4 tsp onion powder
  • 3/4 tsp garlic powder
  • Dash chipotle powder
  • 1 large onion (sliced thin)
  • 1 large red bell pepper (sliced thin )
  • 1 Tbsp coconut oil (or other cooking fat)
  • sea salt (to taste)
  • 2 avocados
  • 1/4 cup onion (minced)
  • 2 clove garlic (minced)
  • 1 jalapeno pepper (minced)
  • 2 Tbsp Tbsp fresh lime juice (or to taste)
  • 2 Tbsp chopped fresh cilantro (plus more for garnish)
  • Sea salt (to taste)
  • Salsa (fresh herbs, sliced jalapeño.)
