Ingredients

The following ingredients have 4 Servings
  • 6 boneless skinless chicken thighs (Marinated, see marinade for details)
  • 1 cup romaine lettuce
  • 1 cup mixed salad leaves
  • 1/2 cup blueberries
  • 1/2 cup blackberries
  • 1 cup strawberries, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup toasted almonds - optional
  • 1 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • 2 tbsp dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup strawberries, chopped (fresh, not frozen)
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/2 tsp garlic, minced
  • 1/2 tsp dijon mustard
  • 2 tbsp honey

Instruction

  • Mix the marinade ingredients together and add the chicken thighs, mix well, cover, and refrigerate for 1 hour.
  • To make the salad dressing add the strawberries, mayonnaise, apple cider vinegar, garlic, dijon mustard, and honey to a blender and blend until smooth.
