Ingredients
The following ingredients have 4 Servings
- 6 boneless skinless chicken thighs (Marinated, see marinade for details)
- 1 cup romaine lettuce
- 1 cup mixed salad leaves
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1 cup strawberries, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup toasted almonds - optional
- 1 cup balsamic vinegar
- 1/4 cup olive oil
- 1 clove garlic, crushed
- 2 tbsp dijon mustard
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup strawberries, chopped (fresh, not frozen)
- 1 cup mayonnaise
- 1/4 cup apple cider vinegar
- 1/2 tsp garlic, minced
- 1/2 tsp dijon mustard
- 2 tbsp honey
Instruction
- Mix the marinade ingredients together and add the chicken thighs, mix well, cover, and refrigerate for 1 hour.
- To make the salad dressing add the strawberries, mayonnaise, apple cider vinegar, garlic, dijon mustard, and honey to a blender and blend until smooth.
