Ingredients
The following ingredients have 4 Servings
- 4-6 firm but ripe pears, peeled, stems intact (we used red Bartlett)
- 1 bottle of Pacherenc (doux) or similar dessert wine
- 1/4 cup of water
- 1/2 cup organic cane sugar
- 2 teaspoons of ground cinnamon (or 1 cinnamon stick)
- 1/2 vanilla bean split lengthwise
- 1 star anise
- 4 whole cloves
- Good quality vanilla ice cream
- 4-6 dark chocolate & salted pistachio cookies (recipe below)
- 2 cups dark chocolate chips (we mixed Guittard 63% & Villars 72%)
- 1 stick of butter, softened
- 1/2 cup of organic cane sugar
- 1 egg
- 1 teaspoon of vanilla extract
- 1 cup flour
- 1 teaspoon of baking soda
- 1/2 cup roasted pistachios, salted, roughly chopped
- Fleur de sel
