Ingredients

The following ingredients have 4 Servings
  • 4-6 firm but ripe pears, peeled, stems intact (we used red Bartlett)
  • 1 bottle of Pacherenc (doux) or similar dessert wine
  • 1/4 cup of water
  • 1/2 cup organic cane sugar
  • 2 teaspoons of ground cinnamon (or 1 cinnamon stick)
  • 1/2 vanilla bean split lengthwise
  • 1 star anise
  • 4 whole cloves
  • Good quality vanilla ice cream
  • 4-6 dark chocolate & salted pistachio cookies (recipe below)
  • 2 cups dark chocolate chips (we mixed Guittard 63% & Villars 72%)
  • 1 stick of butter, softened
  • 1/2 cup of organic cane sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 cup flour
  • 1 teaspoon of baking soda
  • 1/2 cup roasted pistachios, salted, roughly chopped
  • Fleur de sel
