Ingredients

The following ingredients have 4 Servings
  • 3 lbs. orange and/or yellow plum tomatoes (, chopped, 7 cups)
  • 2 onions (, chopped, 2 cups)
  • 1/4 cup olive oil
  • 1/4 cup white wine (or chicken broth)
  • 2 Tbs. chopped garlic (, about 6 large cloves)
  • 2 tsp. dried basil
  • 1 tsp. kosher salt
  • 1/2 tsp. pepper
  • 8 ounces of your favorite pasta (, cooked and drained)
  • 2 Tbs. chopped fresh basil
  • shredded Parmesan cheese

Instruction

  • Preheat oven to 425F.
  • Combine tomatoes, onions, olive oil, wine, garlic, basil, salt and pepper, tossing until evenly coated.
  • Arrange on baking sheet with low sides.
  • Roast 45 minutes, stirring once.
  • Meanwhile, while tomatoes are roasting, cook your pasta according to directions and drain.
  • Remove tomatoes from oven and stir in fresh basil.
  • Toss roasted tomato sauce with hot cooked pasta. Sprinkle with shredded Parmesan.
