Ingredients
The following ingredients have 4 Servings
- 3 lbs. orange and/or yellow plum tomatoes (, chopped, 7 cups)
- 2 onions (, chopped, 2 cups)
- 1/4 cup olive oil
- 1/4 cup white wine (or chicken broth)
- 2 Tbs. chopped garlic (, about 6 large cloves)
- 2 tsp. dried basil
- 1 tsp. kosher salt
- 1/2 tsp. pepper
- 8 ounces of your favorite pasta (, cooked and drained)
- 2 Tbs. chopped fresh basil
- shredded Parmesan cheese
Instruction
- Preheat oven to 425F.
- Combine tomatoes, onions, olive oil, wine, garlic, basil, salt and pepper, tossing until evenly coated.
- Arrange on baking sheet with low sides.
- Roast 45 minutes, stirring once.
- Meanwhile, while tomatoes are roasting, cook your pasta according to directions and drain.
- Remove tomatoes from oven and stir in fresh basil.
- Toss roasted tomato sauce with hot cooked pasta. Sprinkle with shredded Parmesan.
