Ingredients
The following ingredients have 4 Servings
- 2 lbs chicken thighs
- 3 Tbs olive oil
- 1 Tbs minced garlic
- 1/3 cup fresh lemon juice
- 1 Tbs red wine vinegar
- 1 tsp dried oregano
- 1 tsp dried dill
- 1/2 tsp each: dried basil (dried thyme, crushed rosemary, salt)
- 1 Tbs sugar
- 1/4 tsp pepper
- 1 ½ tsp dijon mustard
Instruction
- Whisk together all of the Marinade ingredients in a bowl. Reserve 1/2 a cup.
- Pour marinade into a large freezer bag and add chicken.
- Marinate 4-8 hours.
- Remove chicken from fridge and let sit at room temperature 20-30 minutes.
- Meanwhile, preheat oven to 375 degrees F.
- Use cooking spray or olive oil and coat the inside of a baking dish.
- Place the chicken pieces in a single layer, without extra liquid.
- Bake uncovered for 45 minutes until chicken reaches internal temp of 160 degrees
- Remove chicken from oven, and turn oven on to broil.
- Pour reserved marinade over the top of the chicken thighs.
- Return to oven heated to Broil on high.
- Broil for 3-4 minutes on high to crisp up skin, and turn it a golden brown.
- Rest 5 minutes before serving.
