The following ingredients have 4 Servings
- 4 whole Artichokes
- 3 whole Lemons, Sliced
- 8 cloves Garlic, Peeled
- 6 tablespoons Olive Oil
- 8 pinches Salt
Instruction
- Preheat oven to 375 degrees.
- Remove the small lower leaves, trim off the bottom, and cut the tips off the artichoke leaves. Rub generously with lemon all over to prevent browning.
- Cut artichokes in half, and scoop out the fuzzy choke using a small spoon. Rub lemon all over to prevent browning.
- Pick a pan just large enough to fit artichoke hearts. Place lemon slices, garlic cloves, and artichokes in pan. Drizzle generously with olive oil all over. Give a generous pinch of salt to each artichoke. Massage oil into both sides of artichokes, garlic, and lemon.
- Place artichokes cut side down, on top of lemons, and garlic. Cover with foil, and bake 50-60 minutes or until artichoke hearts are tender when pierced.
- Squeeze fresh lemon over the top, and enjoy plain, or with your favorite dip.
