The following ingredients have 4 Servings
- 6 large eggs
- ½ cup coconut milk
- ¼ cup fresh mushrooms (sliced)
- ¼ cup bell pepper (sliced)
- ½ onion sliced
- 1 tbsp. fresh chives (minced)
- Sea salt and freshly ground black pepper to taste
Instruction
- Preheat your oven to 350 F.
- Whisk the eggs in a bowl with the coconut milk, and season to taste with sea salt and black pepper.
- Pour the eggs into a round casserole or pie dish and distribute the remaining ingredients on top.
- Place in the oven and cook for 20 to 25 minutes.
