Ingredients

The following ingredients have 4 Servings
  • 6 large eggs
  • ½ cup coconut milk
  • ¼ cup fresh mushrooms (sliced)
  • ¼ cup bell pepper (sliced)
  • ½ onion sliced
  • 1 tbsp. fresh chives (minced)
  • Sea salt and freshly ground black pepper to taste

Instruction

  • Preheat your oven to 350 F.
  • Whisk the eggs in a bowl with the coconut milk, and season to taste with sea salt and black pepper.
  • Pour the eggs into a round casserole or pie dish and distribute the remaining ingredients on top.
  • Place in the oven and cook for 20 to 25 minutes.
