Ingredients

The following ingredients have 4 Servings
  • 1 pound ground beef
  • 1 1 oz package or 2 tablespoons homemade taco seasoning
  • 1 bag tortilla chips
  • 1 can (15 oz black beans, drained and rinsed)
  • 1 8 oz bag cheddar cheese, shredded
  • 1 8 oz bag Mexican blend cheese, shredded
  • 1 can (15 oz refried beans)
  • Toppings
  • 1 can (11 oz Fiesta Corn)
  • Tomatoes (cut into small pieces)
  • 2-3 tablespoons red onions (finely diced)
  • 1-2 Jalapenos (seeded and diced or sliced)
  • Sour cream
  • Cilantro (snipped)
  • 1-2 green onions (sliced)
  • 1 Avocado (sliced or diced)
  • 1 can (15 oz black olives, sliced)
  • 1 jar Salsa
  • Lime Wedges
  • Guacamole

Instruction

  • Cook ground beef in skillet on stovetop until no pink remains
  • Sprinkle with taco seasoning and continue cooking for 1-2 minutes. Add 1-2 tablespoons of water if necessary
  • Drain and set aside
  • Preheat oven to 375 degrees F and spray a baking cookie sheet with non-stick cooking spray
  • Add tortilla chips to prepared baking sheet
  • Spoon refried beans over chips
  • Add half of the ground beef mixture over refried beans
  • Add half of the cheddar and Mexican blend cheeses
  • Spoon remaining ground beef mixture over cheese
  • Top with black beans
  • Sprinkle remaining cheeses over beans
  • Bake in oven for 10-15 minutes or until cheese is melted and bubbly
  • Serve warm with your favorite toppings
