Ingredients
The following ingredients have 4 Servings
- 1 pound ground beef
- 1 1 oz package or 2 tablespoons homemade taco seasoning
- 1 bag tortilla chips
- 1 can (15 oz black beans, drained and rinsed)
- 1 8 oz bag cheddar cheese, shredded
- 1 8 oz bag Mexican blend cheese, shredded
- 1 can (15 oz refried beans)
- Toppings
- 1 can (11 oz Fiesta Corn)
- Tomatoes (cut into small pieces)
- 2-3 tablespoons red onions (finely diced)
- 1-2 Jalapenos (seeded and diced or sliced)
- Sour cream
- Cilantro (snipped)
- 1-2 green onions (sliced)
- 1 Avocado (sliced or diced)
- 1 can (15 oz black olives, sliced)
- 1 jar Salsa
- Lime Wedges
- Guacamole
Instruction
- Cook ground beef in skillet on stovetop until no pink remains
- Sprinkle with taco seasoning and continue cooking for 1-2 minutes. Add 1-2 tablespoons of water if necessary
- Drain and set aside
- Preheat oven to 375 degrees F and spray a baking cookie sheet with non-stick cooking spray
- Add tortilla chips to prepared baking sheet
- Spoon refried beans over chips
- Add half of the ground beef mixture over refried beans
- Add half of the cheddar and Mexican blend cheeses
- Spoon remaining ground beef mixture over cheese
- Top with black beans
- Sprinkle remaining cheeses over beans
- Bake in oven for 10-15 minutes or until cheese is melted and bubbly
- Serve warm with your favorite toppings
