Ingredients

The following ingredients have 4 Servings
  • 4 medium russet potatoes (peeled and cut into sticks)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh oregano (chopped)
  • 1 1/2 teaspoon ground sumac
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instruction

  • Preheat oven to 450ºF.
  • In a small bowl, add ingredients for the za’atar spice mix and stir until blended. Set aside.
  • Slice the potatoes into matchsticks place them on a baking tray covered with parchment paper.
  • Drizzle 1 tablespoon olive oil, season with salt and toss the potatoes until they are evenly coated.
  • Bake for 25-35 minutes, flipping them over halfway through the cooking process.
  • Take the fries out of the oven and transfer to a large bowl. Drizzle the remaining 1 tablespoon olive oil, add 2 tablespoons of the za’atar spice mix and toss until the fries are evenly coated. Add more za’atar spice mix if needed. Serve.
