Ingredients
The following ingredients have 4 Servings
- 3 tablespoons pesto
- 4 chicken breasts halved
- 1 cup panko bread crumbs
- 1/2 fine dry bread crumbs
- 2 teaspoons paprika
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
Instruction
- Heat oven to 400° F. Lightly grease a baking pan large enough to hold the chicken in a single layer.
- Wash chicken breasts and pat dry. Gently pound the chicken between sheets of plastic wrap to even thickness.
- In a food processor, pulse the panko and dry bread crumbs with the paprika, salt, and pepper, until well combined.
- Rub each chicken breast with about 1 to 2 teaspoons of pesto, then press in the crumbs to thoroughly coat. Arrange the chicken in the baking pan and bake for about 20 minutes, or until chicken is cooked through.
