Ingredients

The following ingredients have 4 Servings
  • 1 tbsp olive oil
  • 1 cup Orzo (uncooked)
  • 2 cups low-sodium chicken stock
  • 1/2 tsp salt
  • 1 cup snap peas
  • 1/4 cup unsalted peanuts (chopped)
  • 2 tbsp champagne vinegar (or rice vinegar)

Instruction

  • Heat olive oil in a large skillet over medium-high heat. Add uncooked orzo to the pan and cook 3-4 minutes, stirring occasionally until the orzo becomes fragrant and just starts to turn golden.
  • Add the unsalted chicken stock and salt to the skillet and bring to a boil. Boil 8-10 minutes until the liquid is almost absorbed. Add in the snap peas, cover and cook for 2 minutes.
  • Remove the skillet from the heat and stir in unsalted peanuts and vinegar.
