Ingredients
The following ingredients have 4 Servings
- 1 tbsp Olive oil
- 1 Onion (diced)
- 1 Carrot (diced)
- 1 Celery (diced)
- 1 Red bell pepper (diced)
- 2 Garlic clove (crushed)
- 750 ml Vegetable stock
- 240 g Butter beans ((drained weight))
- 400 g Chopped tomatoes (canned)
- 150 g Orzo
- 0.5 tsp dried thyme
- 0.5 tsp Dried basil
- 0.5 tsp paprika
- 1 pinch Sea salt and black pepper
- 60 g Spinach
Instruction
- Heat the oil in a large pan. Add the onion, celery, carrot and red pepper. Cook on a low heat until softened (about 8-10 minutes). Stir in the garlic.
- Add the beans, tomatoes and herbs and seasoning. Mix well.
- Add the orzo and stock, stir and bring to the boil. Simmer for 10 minutes.
- Add the spinach and simmer until it has wilted.
