Ingredients

The following ingredients have 4 Servings
  • 1 tbsp Olive oil
  • 1 Onion (diced)
  • 1 Carrot (diced)
  • 1 Celery (diced)
  • 1 Red bell pepper (diced)
  • 2 Garlic clove (crushed)
  • 750 ml Vegetable stock
  • 240 g Butter beans ((drained weight))
  • 400 g Chopped tomatoes (canned)
  • 150 g Orzo
  • 0.5 tsp dried thyme
  • 0.5 tsp Dried basil
  • 0.5 tsp paprika
  • 1 pinch Sea salt and black pepper
  • 60 g Spinach

Instruction

  • Heat the oil in a large pan. Add the onion, celery, carrot and red pepper. Cook on a low heat until softened (about 8-10 minutes). Stir in the garlic.
  • Add the beans, tomatoes and herbs and seasoning. Mix well.
  • Add the orzo and stock, stir and bring to the boil. Simmer for 10 minutes.
  • Add the spinach and simmer until it has wilted.
