Ingredients

The following ingredients have 14 Servings
  • 1 orange
  • 1 cup raisins
  • 1/3 cup walnuts
  • 2 cups flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup 1 stick unsalted butter
  • 2/3 cup evaporated milk*
  • 1/3 cup water*
  • 2 eggs
  • 1/3 cup Reserved orange juice
  • 1/3 cup sugar
  • 1 tsp cinnamon
  • 1/4 cup finely chopped walnuts

Instruction

  • * 1 cup whole milk may be substituted for the evaporated milk and water.
  • Squeeze juice from the orange; set aside.
  • Using a food processor or grinder (hand or mixer attachment), grind orange rind (pulp and all), raisins and walnuts. Set aside.
  • Preheat oven to 350 degrees F. Grease or spray a 13 x 9-inch baking dish.
  • Place flour, sugar, salt, butter, eggs, baking soda, evaporated milk and water in a large bowl. Beat for 3 minutes at medium speed (4-6 on a KitchenAid stand mixer).
  • Stir in the ground fruit/nut mixture.
  • Turn into pan and spread batter evenly. Bake at 350 degrees F for 35-45 minutes or until toothpick inserted in the center comes out clean.
  • Cool for 5 minutes. With a fork, prick holes evenly across the top of the cake. Pour reserved orange juice over top of the cake and let it soak in...about 10 minutes.
  • Mix the topping ingredients and sprinkle evenly over top of the cake.
  • This cake is better served the next day so the flavors meld.
