Ingredients

The following ingredients have 4 Servings
  • 1 lb large shrimp
  • 1 lb fresh asparagus (cut into 1 inch pieces)
  • 1-2 Tablespoon coconut oil or olive oil
  • 3 garlic cloves minced
  • 1 teaspoon ginger powder or ginger paste
  • Juice of 2 fresh oranges
  • 2 Tablespoon soy sauce or coconut aminos

Instruction

  • Preheat a large skillet and add the oil and garlic.
  • Sauté for approx. one minute.
  • Add the asparagus and cook until bright green, approx 3 minutes.
  • Add the shrimp, ginger, soy sauce or coconut amigos, and fresh orange juice.
  • Stir continually until the shrimp are cooked thoroughly.
  • Serve over rice
