Ingredients
The following ingredients have 12 Servings
- 2 cup flour, whole wheat
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup packed brown sugar
- 1/4 cup honey
- 1 1/4 cup grated carrot
- 1 tbsp orange zest
- 1/4 cup orange juice
- 1 large egg
- 3/4 cup buttermilk
- 2 teaspoon vanilla extract
- 1/2 cup coconut oil
- 1/2 cup cranberries, dried
Instruction
- Preheat oven to 400 degrees.
- In a large bowl, combine flour, baking powder and salt.
- In a separate bowl combine brown sugar, honey, grated carrots, orange zest, orange juice, egg, buttermilk, vanilla extract and melted coconut.
- Pour liquid ingredients into flour mixture and add cranberries. Stir JUST until combined.
- Line muffins tins with 12 cupcake liners and fill evenly. Bake for 15-20 minutes or until the tops spring back when you touch them.
