Ingredients

The following ingredients have 12 Servings
  • 2 cup flour, whole wheat
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup packed brown sugar
  • 1/4 cup honey
  • 1 1/4 cup grated carrot
  • 1 tbsp orange zest
  • 1/4 cup orange juice
  • 1 large egg
  • 3/4 cup buttermilk
  • 2 teaspoon vanilla extract
  • 1/2 cup coconut oil
  • 1/2 cup cranberries, dried

Instruction

  • Preheat oven to 400 degrees.
  • In a large bowl, combine flour, baking powder and salt.
  • In a separate bowl combine brown sugar, honey, grated carrots, orange zest, orange juice, egg, buttermilk, vanilla extract and melted coconut.
  • Pour liquid ingredients into flour mixture and add cranberries.  Stir JUST until combined.
  • Line muffins tins with 12 cupcake liners and fill evenly.  Bake for 15-20 minutes or until the tops spring back when you touch them.
