- 2 teaspoons water
- 1/2 avocado (seeded and diced)
- 1 teaspoon coconut oil
- 1/4 teaspoon kosher or sea salt
- 1/4 teaspoon black pepper
- 2 slices whole-grain bread (toasted)
Instruction
- Whisk together eggs, water, salt, and pepper until fluffy.
- Heat coconut oil in a non-stick skillet over medium heat. Add eggs and stir with a spoon until they begin to scramble. Add diced avocado and stir until desired consistency. Serve over toast.
