Ingredients

The following ingredients have 6 Servings
  • 44 ozs waxy potatoes (peeled and thinly sliced)
  • salt (to taste)
  • 3 Tbsps butter (melted)
  • 2 onions (peeled and cut into rings)
  • freshly ground Black pepper (to taste)
  • 2 sprigs fresh parsley (rinsed and chopped; plus extra for garnish)
  • 4 ozs Salami (thinly sliced)

Instruction

  • Preheat oven to 350ºF / 180°C fan.
  • Blanch sliced potatoes in boiling salted water for 3 to 4 minutes; drain well.
  • Brush the bottom of a casserole dish with melted butter. Layer 1/3 of the sliced potatoes in the bottom of the baking dish. Brush the potatoes with butter and season to taste with salt and pepper. Arrange half of the onions in a layer over the potatoes, followed by half of the parsley and half of the salami. Repeat the process starting with sliced potatoes brushed with butter and ending with a layer of potatoes. Season with salt and pepper and brush with the last of the butter.
  • Bake for 45 to 60 minutes, or until cooked through and golden brown. Garnish with fresh parsley. Slice and serve.
