- 1 large (or 2 medium shallot, roughly chopped)
- 2 medium fennel bulbs (trimmed and thinly sliced)
- 1 1/2 pounds russet or yukon gold potatoes (cut into bite sized pieces)
- 4 roma tomatoes (approx 3/4 lb, quartered, seeds removed)
- 1 tablespoon turmeric
- 1 tablespoon paprika
- 1/2 tablespoon ground cumin
- 2 sprigs fresh thyme
